Directions for use
- Weigh 10 kg of well chilled meat and fat according to your recipe.
- Coarsely mince the meat and mix with nitrite curing salt. Process in a bowl cutter or grinder with part of the ice water.
- Add the Bavarian Sausage Seasoning and the remaining ice water gradually until you achieve a smooth, elastic batter.
- Fry a small test patty, adjust seasoning if needed.
- Stuff into suitable casings and cook or smoke according to your process.
FAQ
How much seasoning per kilo of meat?
One 950 g bag is calculated for 10 kg meat batter. This equals about 95 g seasoning and 15 g nitrite curing salt per kilo of meat.
Can I use normal salt instead of nitrite curing salt?
You can use normal salt, but colour, flavour and shelf life will change. Always follow local regulations for sausage production.
Does the blend contain phosphate?
Yes, the blend contains phosphate (E451) which improves binding and juiciness in the finished sausages.
