Kasumi Whetstone (400/1000)

Your Japanese knives deserve a Japanese stone. Kasumi is produced in Seki, Japan, and is known worldwide for its superior quality. This combination stone is the perfect starting point for serious knife sharpening. The coarse side (#400) is aggressive enough to repair small chips and re-profile the edge, while the medium side (#1000) provides the functional sharpness you need for daily cooking. This is the stone for those who want to take care of expensive steel.

Why Kasumi? Cheap stones wear down quickly and become uneven (dished). Kasumi stones are harder bound, wear slower, and give much better feedback (feeling) when you sharpen.

Instructions

  1. Soak the stone in water for 10-15 minutes before use.
  2. Start on the coarse side (#400) if the knife is dull. Grind until you feel a burr.
  3. Flip the stone to #1000 and polish the edge smooth and sharp.
  4. Wash the stone with clean water and let it air dry completely (not in sunlight).

FAQ

Can I use this on European knives?
Yes, absolutely. Kasumi stones work excellently on all types of steel knives, whether German, French, or Norwegian. You just get an even better result than with a cheap stone.
Why do I need #400?
If you wait too long to sharpen, the edge becomes round. Then it's not enough to polish it (with #1000), you must remove material to create a new angle. For that, #400 is absolutely necessary.
Do I need sharpening oil?
No, and you must not use it! This is a water stone. Oil will permanently ruin the stone. Use only clean tap water.
