Information

Maltodextrin DE 18-19: carrier and bulking agent for spice blends, rubs and sauces

Maltodextrin is a white, almost tasteless powder made from corn starch. It adds volume and body without taking over the flavour, and has only a mild sweetness. That is why it is used as a carrier in spice blends: strong spices spread more evenly when they are mixed into a neutral powder.

Made from corn starch
DE value 18-19
Dissolves in cold liquid
Mild sweetness, neutral taste

The powder dissolves almost completely in water, at least 98 percent, even in cold liquid. That makes it easy to use in brine, marinade and sauce, where it adds body without a floury taste. With heat, maltodextrin can brown and give a faint caramel note, which suits rubs for meat that will be grilled or smoked.

Pro tip!
If you make your own rub with a lot of chilli or garlic, mix the spices with maltodextrin first. With 10 percent maltodextrin in the blend it is easier to sprinkle evenly, and you avoid one clump of strong spice ending up on a single piece.

Features

  • Carrier: Gives spice blends volume, so small amounts of strong spice spread more evenly.
  • Neutral taste: Mild sweetness that does not hide the flavour of the spices.
  • Dissolves easily: At least 98 percent solubility, even in cold liquid.
  • Adds body: Gives sauce, brine and marinade more body without a floury taste.
  • Browns with heat: Can add a faint caramel note to rubs and glazes.

How to use

  1. Weigh the maltodextrin and spices separately.
  2. Mix the spices thoroughly into the maltodextrin before using the blend.
  3. In brine and sauce: stir the powder into cold liquid before heating.
  4. Taste as you go, the sweetness is mild but noticeable in large amounts.
  5. Store the powder dry and closed, it absorbs moisture from the air.

FAQ Frequently asked questions

What does DE 18-19 mean on maltodextrin?

DE measures how far the starch has been broken down. The higher the DE, the sweeter the powder tastes. At DE 18-19 this maltodextrin has a mild sweetness and dissolves easily in water.

How much maltodextrin goes in a spice blend?

A common amount is 0.5 to 10 percent by weight. In 1 kg of rub, 10 percent equals 100 grams of maltodextrin.

Can I use maltodextrin instead of dextrose in fermented sausage?

No. The lactic acid bacteria in the starter culture need dextrose to lower the pH quickly. Fermented sausage typically uses 0.5 to 0.7 percent dextrose.

Can I make oil powder with this maltodextrin?

Oil powders are usually made with a special tapioca based maltodextrin with a finer structure. This maltodextrin is best used as a carrier, bulking agent and thickener.
