Information

Salami cheesecloth for the Browin cheese press: even pressure all the way round

Cylindrical cheese is the least forgiving shape to press. The pressure has to be even all the way round, the whey has to escape without pooling in pockets, and the surface has to end up smooth enough to take wax or ripening. These two polyethylene cloths are cut and shaped for the Browin cheese press and handle all three jobs at once.

Made for the Browin press
Conical holes release the cheese
Smooth finished surface
2 pieces per pack

The holes in the cloth are conical, and that is why the cheese lets go. An ordinary cloth with straight holes grips the surface and tears small pieces loose when you lift the cheese out, while these release cleanly. Polyethylene does not hold moisture either, so you reach the same result at a lower pressing pressure.

Pro tip!
Lay the curd against the smooth inside of the cloth, not the textured outside. That is the side that gives the glossy surface, and if you turn the cloth the wrong way the cheese ends up with a pattern that shows through the wax once it has ripened.

Features

  • Made for the press: Cut and shaped for the Browin cheese press and similar moulds.
  • Conical holes: The cloth releases the cheese cleanly instead of tearing the surface.
  • Does not hold moisture: Polyethylene drains quickly and reduces the pressure you need.
  • Reusable: Takes a 60 to 70 degree wash and lasts for many batches.

How to use

  1. Wash the cloth before first use, 60 to 70 degrees.
  2. Place the cloth in the press mould.
  3. Lay the curd against the smooth inside of the cloth.
  4. Press the cheese at the pressure your recipe calls for.
  5. Lift the cheese out, wash the cloth and hang it to dry.

FAQ Frequently asked questions

Does it only fit the Browin press?

It is made for the Browin cheese press, but it works in similar moulds of the same size. The cloth is 20 x 30 cm, so measure your mould before ordering.

Which side should the curd sit against?

The smooth inside. That gives a glossy, even surface on the cheese. The textured side faces the press and handles the drainage.

Can the cloth be reused?

Yes. Wash it right after use at 60 to 70 degrees and hang it to dry. Always rinse milk residue off in cold water first, hot water sets the proteins into the weave.

Why does my cheese come out uneven at the edges?

Usually because the curd was not spread evenly in the cloth before pressing started, or because the pressure was raised too fast. Start light, let the whey drain for a few minutes, then increase gradually.
