A 20-gram pouch is precisely calculated for up to 200 kg of meat. SP318 gives a classic salami aroma and is the perfect choice for products where a distinct flavor is desired without the acid becoming too dominant. It is easy to mix out and works just as well for enthusiastic hobby producers as for commercial small-scale production.
Add 5 g of dextrose per kilo of meat to give the culture the necessary nourishment it needs during fermentation. Also remember that the product must always be stored in the freezer when not in use.
