The 6 trays measuring 25 x 36 cm are food-grade ABS and give a combined 5500 cm² of drying surface, enough for several kilos of meat, mushrooms or fruit in one session. The cabinet in painted steel and reinforced nylon is built for frequent use, and the keep warm cycle and safety switch make it safe to run overnight. Pro tip for jerky!
Put the meat in the freezer for half an hour before slicing, it firms up enough to cut even, thin slices. Cut with the grain for chew, against the grain for more tender jerky. Marinate overnight in the fridge, and dry until the slices bend and crack at the surface without snapping, that is when they are done.

How to use

  1. Cut the produce into even, thin pieces and spread them on the trays without overlapping.
  2. Choose one of the 6 automatic programs, or set time and temperature yourself with the EVO program.
  3. Let the machine work, check towards the end of the time, and store the finished result airtight, ideally vacuum sealed.

What can I dry in a food dehydrator?

Most things: meat for jerky, fish, fruit, berries, vegetables, mushrooms, herbs and spices. With temperatures from ambient up to 68 °C, the Atacama Pro covers both gentle drying of herbs at low heat and meat at high heat. Mushrooms and herbs typically dry at 40-50 °C, fruit around 57-60 °C and meat at the machine's highest setting.

What temperature and how long does jerky need?

Classic jerky recipes use around 50 °C for about 8 hours for thin slices of meat that have marinated overnight. The time depends on slice thickness and how much you dry at once. The jerky is done when the slices bend and crack at the surface without snapping completely.

Does a food dehydrator use a lot of electricity?

Less than you would think. The Atacama Pro has a maximum power of 500 W, and the thermostat means the element is not on the whole time. Even a long 8 hour session therefore uses at most 4 kWh, in practice less, roughly like one round in the oven, but spread over the whole night.

Why is horizontal airflow better?

In cheaper dehydrators the air blows vertically from the base, so the bottom tray dries faster than the top one and you have to swap the trays around. The Atacama Pro blows the air horizontally across all the trays at once with its Wide Flow technology, the way professional machines do. The result is even drying on all 6 trays without rotating.
