This is finely ground red sandalwood (Pterocarpus soyauxii), which has long traditions in Scandinavia as a natural dye. Although it smells faintly of wood and spice, the taste is so mild and neutral that it does not significantly affect the food. It is therefore used exclusively to provide a warm, glowing red color to everything from herring brines and schnapps to sausages and sauces.

Pro Tip: To avoid "grit" in sauces or brine, you should make an extract first. Boil the sandalwood powder in a little water or brine for 10-15 minutes. Then strain the liquid through a coffee filter or cloth. You are left with a concentrated, ruby-red liquid ready for use!

FAQ

Does it add flavor to the food?
No, practically not. Although it smells slightly aromatic, it is used in such small quantities (or as an extract) that it does not change the taste of the herring or sausage, only the color.
Is it the same as perfume sandalwood?
No. The exclusive white sandalwood (Santalum album) is used in perfume. This is red sandalwood which is primarily used for coloring.
Does it dissolve?
No, it is ground wood, so it will not dissolve completely like salt or sugar. That's why we often recommend boiling an extract and straining it if you want a completely clear liquid.
