FAQ Frequently Asked Questions
Can I use oak for light meat or fish?
Oak has a very strong flavor profile that can quickly overpower mild ingredients like chicken or white fish. If you still want to try, we recommend using very little oak, or mixing it with a lot of apple or birch to balance the smoke flavor.
Do I need to soak the wood chips before use?
This depends on your equipment. If you use electric smokers and generators (like Borniak), the chips should always be used dry so as not to ruin the feeding mechanism. If you are going to use it in a smoker box over direct heat on a gas grill, it may be a good idea to soak the chips for half an hour first to create more steam and prevent them from burning up too quickly.
