Marjoram - The Sausage Maker's Secret

Marjoram (Origanum majorana) is often called "sausage herb" in Germany, and for good reason. This herb is related to oregano but has a much milder, sweeter, and more floral aroma. This makes it the perfect spice when you want herbal flavor without the bitterness that oregano can impart. Marjoram is absolutely essential in classic liver pâté, rolled lamb sausage (lammerull), and many types of bratwurst, but it is also a fantastic all-rounder for pizza, pasta, and chicken.
