Ground Mace: The Sausage Maker's Exclusive Spice

Mace is the thin orange lattice that surrounds the nutmeg seed, and it is considered the most elegant of the nutmeg spices. The flavour is softer and more floral than nutmeg, with the same warm sweetness, which is exactly why ground mace is the classic choice in pale sausages, white sauces and fine baking. Here you get it finely ground, ready to stir straight into the sausage meat or the sauce.

Milder and rounder than nutmeg
A classic in pale sausages
Warm, sweet and floral aroma
100% pure mace

In the sausage kitchen, mace is one of the quiet workhorses: wieners, frankfurters and other pale, emulsified sausages get warmth and depth from a small dose, without the spice dominating or leaving dark specks in the meat. In cooking it does the same job in bechamel, mashed potatoes, fish gratins and light soups, and in baking it brings the warm note to everything from pound cakes to Christmas treats. Choose between 100 g, 500 g and 1 kg, with the best price per kilo on the large pack.

Pro tip!
Heat drives the aroma out of the spice: add the mace towards the end of the cooking time in sauces and soups, and you keep the fine floral top note. In sausage meat, mix it in together with the salt and the other spices, that way it spreads evenly through the whole batch.

Features

  • Elegant flavour: Warm and sweet like nutmeg, but softer and more floral, it never dominates the dish.
  • Made for pale dishes: Gives nutmeg warmth in white sauces and pale sausages without discolouring them.
  • Finely ground: Stirs straight into sausage meat, sauce or batter, no grating or mortar needed.
  • Pure spice: 100% mace with no additives, and no known allergens.
  • Three sizes: 100 g for the kitchen drawer, 500 g and 1 kg for the sausage maker and the professional kitchen.

How to use

  1. Measure the amount using the dosage guide below, mace should support the dish, not dominate it.
  2. In sausage meat: mix the spice with the salt and work it into the meat early, so it spreads evenly.
  3. In sauces and soups: stir in towards the end of the cooking time and season to taste.
  4. Keep the container tightly closed, dry and dark after use.

FAQ Frequently asked questions

What is the difference between mace and nutmeg?

Both come from the same fruit: nutmeg is the seed itself, while mace is the orange lattice that surrounds it. Mace tastes softer and more floral than nutmeg and has a lighter colour, which is why it is the first choice in white sauces and pale sausages where nutmeg can leave dark specks.

How much mace should I use in sausages?

Count on 0.5 to 1 g per kg of sausage meat, which corresponds to roughly ¼ to ½ tsp. The classic wiener uses 0.5 g per kg together with white pepper. Start at the lower end and adjust upwards in the next batch, mace should stay in the background.

Can I replace nutmeg with mace?

Yes, swap 1:1 in any recipe. The result is slightly milder and more aromatically floral than with nutmeg, which many prefer in fine sauces, soups and baking. It also works the other way: 1 tsp of mace is replaced by 1 tsp of grated nutmeg.

How long does ground mace keep?

Stored tightly closed, dry and dark, ground mace keeps a good aroma for around a year. The spice does not become unsafe after that, but it gradually loses strength. Smell the container: if it smells warm and sweet, it is still good.
