Information

Whole Caraway - The Flavor of Nordic Cuisine

Caraway (Carum carvi) is perhaps the most quintessentially Norwegian spice. With its sharp, slightly anise-like, and fresh flavor, it is indispensable in traditional dishes such as sauerkraut (surkål), mutton stew (fårikål), and roast pork. Caraway is also the main botanical in Norwegian Aquavit, and many use it in homemade bread, crispbread, and cheeses. Whole seeds retain the essential oils best and provide a burst of flavor when chewed.

✔ 100% Pure Caraway
✔ Strong aroma
✔ For sauerkraut & meat
✔ Perfect for aquavit
Tip: Caraway is known for aiding digestion, which is why it is traditionally paired with fatty foods like pork, mutton, and cabbage dishes. A small sprinkle in the boiling water for cabbage reduces odor and makes the food easier on the stomach!

Applications

  • Traditional Food: Main ingredient in sauerkraut, cabbage stew, and mutton stew.
  • Baking: Adds delicious flavor to rye bread, crispbread, rolls, and savory sticks.
  • Drinks: Make your own spiced schnapps or aquavit by steeping caraway in neutral spirits.
  • Cheese: Classic addition to soft cheeses and spiced gouda.

FAQ

Is caraway the same as cumin?
No, although the seeds look similar (both are in the umbellifer family), they taste completely different. Caraway has a sharp, Nordic flavor, while cumin has a warm, earthy flavor known from tacos and Indian food. They cannot replace each other.
Should I crush the seeds?
For sauerkraut and bread, they are often used whole. If you want the flavor more evenly distributed in a stew or mince, you can lightly crush them in a mortar.
How do I make caraway tea?
Lightly crush 1-2 teaspoons of seeds, pour boiling water over them, and steep for 10 minutes. This is an old remedy for bloating.
