It is a multi-layer, co-extruded artificial casing made of PA/PE materials. This makes it extremely strong and flexible, while possessing shrinkage properties that ensure the sausage stays tight and wrinkle-free after cooking and cooling.

This is a barrier casing designed for cooked products like servelat, bologna, and ham. It does not release moisture, meaning zero weight loss during cooking and a long shelf life for the finished product. Although the nominal diameter is 75 mm, the casing is so flexible that the manufacturer recommends a filling diameter of up to 83 mm. This provides an extra plump and firm sausage.
To achieve proper elasticity, the casing must be soaked in cold water (below 25°C) for approx. 60 minutes before use. This is crucial for the casing to expand correctly during stuffing without bursting.

Can I smoke sausages in this?
No, the material (PA/PE) is impermeable and does not let smoke through. Use liquid smoke in the batter if you want a smoky flavor.
How do I tie the casing?
You can use butcher's twine and tie securely, or use sausage clipping pliers. Ensure the knot is tight to prevent water ingress.
