Do I need to soak the wood chunks before placing them on the grill?
You do not have to, but it is often a very good tip. Pieces of this size can advantageously be soaked for about half an hour before you place them on the embers. This delays combustion and ensures that they smolder slowly instead of burning up quickly.
How do I use wood chunks in a gas grill?
On a gas grill, the easiest way is to balance a couple of pieces directly on the flavorizer bars right above the burner. Alternatively, you can place them in the corner directly on the cooking grate itself. As soon as they start to smoke, you can lower the heat slightly and add the food.
