Besætt BBQ Sweet and Spicy: grilled onion and Norwegian tomatoes

A lightly smoked BBQ sauce built on the same surplus tomatoes from Hanasand Gård, with grilled onion as the load bearing element. It is noticeably less sweet than most American BBQ sauces, and that is the whole point: here you are meant to taste the tomato and the onion, not only the molasses. Sweet and spicy means sweetness with a comfortable warmth behind it, not sugar syrup.

The numbers say it best. This one has 17.31 grams of sugar per 100 grams, while a typical American BBQ sauce sits well above that and the ketchup in the same range sits at 21.3. That means the sauce copes better on the grill without burning, and that you can use more of it without the dish turning sticky. The smoke is kept light on purpose. If you have already smoked the meat yourself in an offset or a charcoal grill, you do not want a sauce that lays a second layer of smoke on top. The grilled onion brings sweetness and depth that does not come from sugar, and that is what separates this from a tomato based BBQ sauce out of a tin.

Brush it on only when the meat is almost done. The sugar in a BBQ sauce starts to caramelise around 150 degrees and burns quickly above that, so a sauce applied early turns bitter long before the meat is cooked through. Reckon on twenty minutes for ribs and chicken wings, and three to four minutes for a burger. For a glossier glaze, brush on two thin coats five minutes apart rather than one thick one.
