Besætt Spicy Ketchup: the ketchup that answers back

The same ketchup on Norwegian surplus tomatoes from Hanasand Gård, but with the habanero brought forward instead of hidden behind. It is still a ketchup and not a chilli sauce, so the heat arrives after the tomato rather than in front of it. You notice it once the mouthful is over, as a warmth that stays put and makes you take another.

The difference from the mild ketchup in the range is dosage, not recipe. The spice base is the same: cumin, celery salt and gluten free soy sauce for earthiness and umami, with yellow cayenne and habanero as aromatic seasoning. In this version the habanero is turned up to the point where it stops being aroma and starts being heat. A habanero is a fruit before it is a heat rating, and it is that fruitiness that makes the pepper suit tomato so well. If you find ordinary ketchup too polite beside a grilled sausage, this is the bottle that belongs on the table.

Whisk 1 tbsp of spicy ketchup into 3 tbsp of mayonnaise and you have a burger sauce in ten seconds that beats most of what you can buy ready made. To take it further, add a pinch of smoked paprika and a few drops of the vinegar from a jar of pickles. The same mix works as a dip for fries, chicken wings and onion rings, and it keeps in the fridge for three to four days.

How to use

  1. Shake the bottle before use.
  2. Use it as ordinary ketchup on burgers, sausages and fries, only with more bite.
  3. Whisk it into mayonnaise at one part to three for a quick burger sauce.
  4. Brush it onto chicken wings or ribs for the last twenty minutes, so the sugar can caramelise without burning.
  5. Keep the bottle cool after opening, and keep the spout clean.

How hot is it?

Noticeably hotter than an ordinary ketchup, but a long way short of a chilli sauce. The habanero is turned up until it reads as warmth rather than aroma, and the heat arrives after the tomato instead of before it. If you handle a medium taco you will be fine with this. To soften it, mix it half and half with the mild ketchup from the same range.

What is the difference between this and the mild ketchup?

The amount of habanero. Both are made from the same Norwegian surplus tomatoes and the same spice base of cumin, celery salt and soy sauce. In the mild one the cayenne and habanero sit there as aroma, in this one the habanero is lifted to a level where it delivers heat.

What do I use it for?

Everything you use ketchup for, but grilled and rich food in particular. Burgers, sausages, ribs, chicken wings and fries. It is also better than plain ketchup in a burger sauce, because the heat survives being mixed with mayonnaise.

Which allergens does it contain?

Three of the fourteen declarable ones: celery from the celery salt, soy from the soy sauce and sulphites from the apple cider vinegar. The soy sauce used is gluten free. Always check the label on the bottle before serving to anyone with an allergy.

Why are the tomatoes surplus tomatoes?

Because a Norwegian grower is left with large quantities of perfectly good tomatoes that are too large, too small or too crooked to be sold loose. They are just as ripe and just as good, they simply look wrong. Besætt buys them and cooks them into ketchup rather than letting them go to the compost heap.
