The blend already contains salt, dextrose, and the preservative sodium nitrite (E250). This makes production incredibly easy for you as a sausage maker. The nitrite salt not only contributes to food safety during curing and maturation, but also ensures that the meat retains its delicate, red color in the finished product.
Once you have minced the pork and mixed in the chorizo spice, we highly recommend letting the batter rest in the refrigerator overnight before stuffing it into the casings. This gives the strong flavors from the paprika, chili, and fennel time to properly set in the meat, resulting in a much richer and more complex sausage.

Do I need to add extra salt to this blend?
The blend already contains 16.2 grams of salt per 100 grams of spice. Whether you need extra salt depends on how much spice blend you use per kilogram of meat, and your personal preference for saltiness in the finished sausage. We recommend frying a small test patty of the batter before stuffing the sausages, so you can adjust the seasoning if necessary.
Why does the spice contain the preservative E250 (sodium nitrite)?
Nitrite is a standard ingredient in modern sausage making. It serves two very important functions: It prevents the growth of unwanted bacteria during maturation, and it ensures that the meat retains a delicate, red color instead of turning gray. Since it is already incorporated into the blend, you do not have to measure out curing salt separately.
Does the spice contain allergens?
No, the product is completely free from declarable EU allergens (such as gluten, lactose, mustard, celery, and soy). However, it does contain dextrose extracted from corn, which is important to know for individuals with a specific corn intolerance (LeDa list).
