Should I soak these coarse wood chips?
When using coarse wood chips on a charcoal grill or in a smoker box over direct heat, it is a very good tip to soak the chips for 20 to 30 minutes first. This delays combustion so the wood smolders and gives off even steam and smoke, instead of burning up right away.
