Although developed for game, Hunter's Mix is a "secret ingredient" for many chefs when preparing lamb or beef as well. It works excellently as a rub on roasts before slow cooking, or as the main seasoning in homemade venison burgers and cured sausages. The blend contains salt but is balanced so you can adjust the final result yourself.
Brown the meat quickly in the pan and sprinkle Hunter's Mix over it towards the end of frying to awaken the aromas (do not burn the spices). Add cream and a little lingonberry jam to the sauce - the spice blend ensures the perfect balance between the wild, the salty, and the creamy.
