Information

Masahiro Hocho knife set: two utility knives in Japanese AUS8 steel, 9 and 18 cm

Most kitchen jobs can be handled with two knives: a small one for work in the hand and a long one for cutting on the board. Masahiro Hocho is exactly that set. The small 9 cm knife peels, trims and portions, while the large 18 cm knife handles vegetables, meat and fish.

Japanese AUS8 steel
Hardness HRC 58
Knives of 9 and 18 cm
Comes in a gift box

The blades are made from AUS8, a Japanese stainless steel hardened to HRC 58. That gives an edge that stays sharp for a long time, while being easy to maintain at home with a honing rod and whetstone. The handles are laminated wood that sits well in the hand, even when wet. The set comes in a gift box and suits your own kitchen as well as a present.

Pro tip!
Draw the knife a few calm strokes over a ceramic honing rod before a bigger cutting job. That realigns the edge before it gets dull, and you will need the whetstone far less often. If it is your first time sharpening, a combination stone with 600 and 1000 grit is a good place to start.

Features

  • Two knives that cover most jobs: 9 cm for peeling and trimming, 18 cm for cutting on the board.
  • Japanese AUS8 steel: Stainless steel that holds its edge and is easy to sharpen.
  • Hardness HRC 58: Hard enough for a lasting edge, without becoming brittle.
  • Laminated wood handles: Good grip and a warm, exclusive finish.
  • Gift box: The set comes ready to give away.

How to use

  1. Use a wooden or plastic cutting board, never glass, stone or metal.
  2. Use the small knife in the hand and the large knife against the board.
  3. Wash the knives by hand with warm water and a little detergent right after use.
  4. Dry the knives well so both the steel and the wooden handles stay in good shape.
  5. Store the knives in a knife block, on a magnetic strip or in the box, so the edge does not hit other utensils.

FAQ Frequently asked questions

What are 9 and 18 cm knives used for?

The small 9 cm knife is for peeling, trimming and small jobs in the hand. The large 18 cm knife is a versatile knife for vegetables, meat and fish on the cutting board.

Can the knives go in the dishwasher?

No. Heat, strong detergents and knocks against other utensils dull the edge and dry out the wooden handles. Wash the knives by hand and dry them straight away.

How do I keep the knives sharp?

Use a ceramic honing rod regularly, ideally before a bigger cutting job. When the rod no longer helps, sharpen on a whetstone. A stone with 600 and 1000 grit suits beginners well.

What does HRC 58 mean?

HRC is a measure of how hard the steel is. At HRC 58 the edge stays sharp for a long time, while the steel is easy to sharpen on ordinary whetstones.
