Whole Cloves - The Scent of Holidays and Warmth

Whole cloves are small, dried flower buds with immense flavor power. Their name comes from their shape, resembling small nails ("clavus" in Latin). This spice is the very definition of a Nordic Christmas – whether stuck into an orange for an advent calendar, studding a Christmas ham, or flavoring mulled wine. But cloves are also a pillar of Indian cuisine, essential in pickling brines for beets and herring, and a key part of a good gravy or stock.

Chef's Tip: Making béchamel sauce or boiling stock? Attach a bay leaf to half an onion by piercing 2-3 cloves through the leaf and into the onion ("Onion Piqué"). This makes it easy to fish out all the aromatics in one go before serving.

FAQ

Can you eat whole cloves?
They are not dangerous to eat, but they are very hard and have an extremely intense flavor that can numb the tongue slightly. It is therefore common to remove them before serving or eat around them.
Why does it numb the tongue?
Cloves contain large amounts of eugenol, an essential oil that has a natural local anesthetic effect. Historically, it has been used for toothaches for this very reason.
How many should I use?
Be careful. Cloves are one of the most potent spices we have. 2-3 cloves are often enough for a whole stew. In mulled wine, you can use more.
