Information

Ole Martin Alfsen Masahiro Neo 18 cm: chef's knife with a powder steel core

Masahiro Neo is the knife star chef Ole Martin Alfsen has put his name to. It is not a showpiece but a precision tool made for long days in the kitchen. The blade is 18 cm, a length that gives good control and suits most tasks. The knife handles hard use and keeps a very sharp edge for a long time, and it comes in an Ole Martin Alfsen gift box.

18 cm blade
Powder steel core
Hardness above HRC 60
Comes in a gift box

Neo has a core of laminated powder steel. Powder steel has a finer structure than ordinary steel, so the edge is both sharper and stays sharp longer. The hardness is above HRC 60. The blade has a kengata profile, with an angled tip reminiscent of a sword. The handle is moisture resistant pakka wood and gives good balance, whether you are chopping herbs or slicing meat.

Pro tip!
Never use the knife on bone, frozen food or hard surfaces such as glass and stone. A hard Japanese blade is made for clean cuts, and the edge can chip if it is used like a cleaver.

FAQ Frequently asked questions

What is powder steel?

Powder steel is made from finely ground metal powder that is pressed and heat treated. It gives a more even structure than ordinary steel, so the edge is sharper and lasts longer.

What does kengata mean?

Kengata is a Japanese blade profile with an angled tip, inspired by swords. The tip gives good precision in detail work.

Can the knife go in the dishwasher?

No. Heat and strong detergents dull the edge and can damage the handle. Wash by hand and dry well straight away.

Is the knife a good gift?

Yes. The knife comes in an Ole Martin Alfsen gift box and makes a great gift for anyone who loves to cook.
