Primo V-Rack Roast and Rib Rack: Two Tools in One Rack
A whole chicken that tips over, a roast lying flat on the grate and ribs taking up the entire grill surface: a V-rack solves all three problems at once. This reversible rack from Primo is used with the V facing up as a roast rack, where large cuts and poultry sit steady through the whole cook. Flip it upside down, and the slots hold up to 5 racks of ribs standing side by side, so you smoke a whole batch of ribs in the space one flat rack would take.

When the ribs stand on edge, smoke and heat reach both sides of every rack, and the fat drains freely instead of pooling under the meat. The result is more even color, better bark and far better use of the grill when everyone wants ribs. As a roast rack the V-shape lifts the meat off the grate, so heat circulates around the whole cut and a drip pan slides in easily underneath. The porcelain-enameled surface withstands high heat, releases food easily and cleans up quickly afterwards.
Place a drip pan with a little water or apple juice under the rack when the ribs are standing in the slots. The liquid catches the fat without flare-ups, keeps the air in the grill moist and gives juicier ribs through long smoking sessions.
Ribs and roasts on the kamado are best done with indirect heat. Primo heat deflector plates shield the food from the direct embers and turn the grill into an oven, the perfect foundation under this rack.

FAQ Frequently asked questions
Why stand the ribs on edge?
Standing ribs give three advantages: smoke and heat reach both sides of every rack, the fat drains freely instead of pooling under the meat, and you fit up to 5 racks in the space one flat rack would take. Perfect when the whole family wants ribs.
How is the rack used as a roast rack?
Turn the rack so the V points up, and place the roast, chicken or turkey in the V-shape. The meat then sits steady without tipping, lifted off the grate so heat circulates around the whole cut, with plenty of room for a drip pan underneath.
Does the rack fit my grill?
The rack is made for the Primo Oval XL 400, Oval LG 300 and large round kamados, but works in practice on any grill or in the oven with enough space on the grate. Check that your grill has room for the rack with the lid closed.
How do I clean the rack?
The porcelain-enameled surface releases food easily: let the rack cool down, then wash it with hot water, dish soap and a soft brush. Avoid steel wool, which can scratch the enamel.
