"The holy trinity of the Japanese kitchen"

Masahiro Bessen is the series for the purist. These knives are crafted the "old way" using traditional Carbon Steel (Ki-gami No.2). Unlike modern stainless knives, these blades will develop a patina over time. In return, you get extreme hardness (HRC 61-63) and a level of sharpness that is hard to match with any other steel.

📦 This set includes:

  • 1. Yanagiba (21 cm): The long, slender "sashimi knife". Designed to slice raw fish in one long, continuous stroke without damaging the cell structure.
  • 2. Deba (15 cm): The heavy "cleaver". A thick and robust knife used for filleting whole fish, cutting through fish bones, and rough butchery.
  • 3. Usuba (16.5 cm): The vegetable knife. A thin, rectangular blade used for cutting vegetables with extreme precision (e.g., Katsuramuki technique).

⚔️ True Carbon Steel

Forged in Ki-gami No.2 (Yellow Paper Steel). This steel is known for its ability to become "scary sharp" and is easy to resharpen. Note: The knife must be dried immediately after use to avoid rust.

🌳 Magnolia Wood

The handle is made of untreated Magnolia wood with a reinforcing plastic ferrule. The traditional D-shape (or oval) provides a superb grip, even with wet hands.
