The knife is made of patented NITRO-B steel, ensuring a razor-sharp edge that lasts. The main difference between this and a "semiflex" knife is that the blade yields more. This makes it indispensable when removing tendons (trimming) or filleting fish, where you need the knife to flatten against the surface.
This knife is a favorite among competition chefs for "trimming" meat. The flexible tip makes it easy to glide under the silverskin on a tenderloin or sirloin without cutting away valuable meat.
Features
- ✔ Flexibility: The blade bends easily, providing maximum control for fine work.
- ✔ Grip: Standard Supra handle in black SEBS rubber provides a safe, non-slip grip.
- ✔ Quality: NSF certified and withstands professional use and cleaning.

FAQ
What is the difference between this and semiflex?
This model (Flexible) has a softer blade than the Semiflex. Choose this for fine work, fish, and trimming. Choose Semiflex if you also need to cut through cartilage and joints.
Why is the handle black?
Black is the standard color in the Supra series and is used as a "universal" knife, unlike the color-coded ones (red/yellow/blue) which are dedicated to specific zones (HACCP).

What truly sets Ambrogio Sanelli apart is their use of NITRO-B – a specially developed stainless steel infused with nitrogen. This is crucial in humid environments like commercial kitchens and the food industry.
You might recognize them by their ergonomic, black (or color-coded) handles. The Supra line is the workhorse of Sanelli, developed with non-slip SEBS handles that sit firmly in the hand, even when wet or greasy.
