Brown mustard seeds (Brassica juncea) are known for being significantly sharper and more aromatic than their yellow relatives. While yellow seeds provide thickening and mild flavor, brown seeds deliver that characteristic "kick" that tickles the nose – think of a good Dijon or English mustard. Besides being the main ingredient in spicy mustard, brown seeds are fantastic toasted in oil for Indian dishes, or used whole in coarse sausages for texture and bursts of flavor when chewed.

Chemistry Tip: Mustard heat develops when crushed seeds come into contact with cold liquid (enzyme reaction). Want a hot mustard? Mix the mustard powder with cold water first. Want a mild mustard or curry? Use boiling water or fry the seeds in oil, as this stops the enzymes that create the "burn".

How do I best crush them?
Mustard seeds are small and hard. A mortar works, but it takes time. The best is often a dedicated electric spice grinder/coffee grinder.
Can I plant them?
