Sausage Stuffer Tre Spade Minnie Classic 3 Litre: The Sausage Maker's Best Friend

Horizontal sausage stuffer from Italian Tre Spade, made by FACEM, the ideal solution for homemade sausages, salami and other cured meats. The 3 litre cylinder is stainless steel with watertight welds, hygienic and built to last. The piston in food-grade certified Moplen has a silicone gasket and an air release valve, letting air out of the mixture instead of pressing it into the casing. Four funnels of 10, 20, 30 and 40 mm are included.

3 litre stainless steel cylinder
Piston with air release valve and gasket
4 funnels, 10 to 40 mm
Clamps for steady bench mounting

The horizontal design sits low and stable on the bench, fixed with the included clamps, so you can crank with one hand and guide the casing with the other. The carbon steel rack with anti-oxidation coating gives smooth, precise movement, and the mixture is pressed gently into the casing without further working, exactly how the professionals want it. With 3 litres of capacity you get through a weekend of sausage making without constant refilling, and the four funnels cover everything from thin lamb sausages to coarse salamis.

Pro tip for sausage making!
Soak natural casings in lukewarm water for at least 30 minutes and rinse water through them before use. Slide the casing loosely onto the funnel, fill evenly without packing too hard, and leave a little room at the ends for tying. If you spot an air pocket, prick it with a clean needle before linking the sausages, and nothing will burst in the pan.

Features

  • Hygienic cylinder: Stainless steel with watertight welds, easy to fill, empty and clean.
  • Air-free sausages: Food-grade Moplen piston with silicone gasket and air release valve that prevents air pockets in the casing.
  • Complete from the start: Four funnels of 10, 20, 30 and 40 mm and bench mounting clamps included in the box.

How to use

  1. Fix the stuffer to the bench with the clamps, fill the cylinder with cold sausage mixture and choose the funnel to match the casing.
  2. Slide the soaked casing onto the funnel, and crank at a steady pace while guiding the filling with your other hand.
  3. Take apart and wash the cylinder, piston and funnels in hot soapy water after use, and dry well before storage.

FAQ Frequently asked questions

Why a stuffer when my grinder has a sausage funnel?

A stuffer presses the mixture gently into the casing without working it further, while the grinder's auger kneads and warms the mixture one more time. The result is firmer sausages with better texture, and the job goes faster and more evenly, especially when you make more than a couple of kilos.

Which casings fit the funnels?

The thinnest 10 mm funnel suits narrow casings like sheep casings, the 20 and 30 mm funnels cover hog casings and regular dinner sausages, and the largest 40 mm is used for coarse sausages like cervelat and salami. With four funnels in the box you are covered for most projects.

What is the difference between a horizontal and a vertical stuffer?

Both do the same job, the difference is the working position. A horizontal stuffer sits low and stable on the bench, fixed with clamps, and gives good control of the casing. A vertical stuffer takes less bench space in width. The choice is mostly about how you like to work and how much space you have.
