Which side should the food be placed on?
You choose entirely yourself! Both the gold and silver sides are safe to use in direct contact with food. Gold often provides a very luxurious frame for smoked salmon and cured meats, while silver can look very clean and delicate for cheese or white fish.
How do I choose the right size vacuum bag?
Since the board is 165 mm wide, you should use a vacuum bag that is wide enough for the board to slide in easily (for example, a bag that is 20 cm wide). Remember to calculate enough length on the bag so the machine has room to seal the plastic.
