Plastic Casing Ø73 mm: Impermeable Casing for servelat and other cooked sausages

Plastic casing is the impermeable opposite of natural casing. The wall lets neither moisture out nor smoke in, and that is exactly the point: the sausage keeps its weight through the whole cooking process instead of drying in, and the product stays juicy through cooking, chilling and freezing. This is plastic casing in Ø73 mm, supplied as 8 metres, for servelat and other cooked sausages.

The casing comes on a roll, so you cut exactly the length you need for each sausage. Because the casing is impermeable, it must not be used for smoking or curing. Smoke cannot get in and moisture cannot get out, so the sausage never dries. If the product is to be smoked, natural, collagen or fibrous casing is the right choice. Plastic casing is also not edible and must be removed before serving.

Pro tip!
Cook the sausages in a pot where they lie free and do not press against each other. Plastic casing does not give the way natural casing does, so two sausages squeezed together in the pot end up with flat sides that stay flat. And keep the water at 80 to 85 degrees here too, so the emulsion does not break inside the sealed casing.

How to use

  1. Thread the casing onto the horn, or cut the length you need first.
  2. Stuff evenly and firmly, with no air pockets.
  3. Close the end with a clip or tie it off securely.
  4. Cook at 80 to 85 degrees until the product is heated through.
  5. Chill quickly in cold water before storing or freezing.
  6. Remove the casing before serving.

Can I smoke sausages in plastic casing?

No. Plastic casing is a fully impermeable barrier, and the smoke simply does not pass through the wall. If the sausage is to be smoked or cured, you need natural, collagen or fibrous casing, all of which breathe.

Does the casing have to be removed before eating?

Yes. Plastic casing is not edible and has to be peeled off. In return it releases easily from the meat, and on products like servelat and liver pâté the casing is cut away as a matter of course anyway.

Why use plastic casing rather than natural casing?

Because it holds the weight. An impermeable casing stops liquid evaporating during cooking, so you get a higher yield and a juicier product. It is also perfectly even in calibre and takes freezing, which makes it the first choice for cooked products meant to be stored.

Does the casing take freezing?

Yes. The impermeable wall protects against freezer burn, and that is one reason plastic casing is used for products stored for a long time. Thaw slowly in the fridge for the best result.
