Yes, absolutely! In the Nordic region, birch is actually one of the most widely used types of wood for smoking salmon and trout, precisely because it provides an incredibly clean and mild smoke flavor that perfectly complements the fish.
Do I need to soak the wood chips before use?
This depends on your equipment. If you use electric smokers and generators (like Borniak), the chips should always be used dry. If you are going to use it in a smoker box over direct heat on a gas grill, it may be a good idea to soak the chips for half an hour first to create more steam and prevent them from burning up too quickly. Also, remember not to overfill the smoke box to ensure a clean flavor.
