Tip: You can use regular whole milk from the store! Since the kit contains calcium chloride, you will get a firm and nice curd even with pasteurized milk. To make hard cheeses (like Gouda) or blue cheese, you simply need to buy a suitable bacterial culture separately.

Instructions (Short version)

  1. Heat milk to the specified temperature (use the thermometer).
  2. Add calcium chloride and rennet dissolved in a little water.
  3. Let the mixture stand until it sets (coagulates).
  4. Cut the curd into cubes and drain the whey using the cheese cloth.
  5. Press the cheese in the mould and add spices as desired.

FAQ

Which milk should I use?
You can use fresh raw milk or regular whole milk from the store (pasteurized). Avoid UHT milk (ultra-pasteurized), as it will not coagulate properly.
How long does it take?
Making the fresh cheese itself often takes less than an hour. If you are making harder cheeses or cheeses that need aging, the process takes longer.
Is the rennet vegetarian?
Yes, the rennet included in this kit is microbial (vegetarian), so you can make cheese without animal enzymes.
