Recipe: How to make fantastic Mock Salmon!
Making your own mock salmon is incredibly fun and tastes heavenly. Here is our best method for a perfect result.
You will need:- 1 kg skinless and boneless saithe fillet
- 1 kg coarse salt
- 1 liter cold water
- 2 grams Saithe Salmon Color
- 20 ml Liquid Smoke (optional)
- Neutral oil (e.g., canola or soy oil) for covering
- Dry Salting: Place a layer of coarse salt in a dish, place the fish on top, and cover it completely with the rest of the salt. Refrigerate for 3 days. This draws out the water and gives the fish a firm texture.
- Rinsing: Rinse the fish very well in cold water to remove all surface salt.
- Color Bath: Mix 2 grams of color powder (and liquid smoke if desired) into 1 liter of cold water.
- Coloring: Cut the fish into thin slices and carefully place them in the color bath. Make sure the liquid just covers the slices. Let sit overnight in the fridge. Gently lift the slices occasionally for an even color.
- Storage: Remove the slices, let them dry slightly, and place them in clean jars. Pour over neutral oil until the fish is completely covered. The mock salmon will now keep for many weeks in the fridge!

Mixing Ratio and Dosage
Tip: Only make as much color bath as you need to cover the fillets. Too much liquid does not improve the color, it only wastes the powder.

FAQ
How do I get a smoky flavor on the fish?
You can easily add 2 to 2.5 tablespoons of liquid smoke per liter of water directly into the color bath. Then both the color and flavor will soak into the fish overnight.
Which oil is best to use for storage?
We recommend a completely neutral oil like soy oil or canola oil. Olive oil has too much of its own flavor and will solidify (become cloudy) when kept in the fridge.
