The uses are many: juniper sausage and other cured meats, roasts and pâtés, grilled dishes, cheeses, soups, sauces, marinades and vegetables. The flavouring is water based and easy to measure precisely, so you hit the same flavour level every time. The contents are water, flavourings with 3.9% juniper flavouring and the colourings caramel and paprika extract, and the product complies with the updated EU regulations for smoke flavourings. Store the bottle tightly closed, away from light and at room temperature.
Start with 6 ml per kg of meat mixture and fry a small test patty before stuffing. The smoke flavour develops during cooking, so it is easier to adjust upwards than to rescue a mix that turned out too smoky.

How much liquid smoke do I use in sausage meat?
Use 6-10 ml per kg of meat mixture. Start at the lower end, mix well and fry a small test patty before stuffing. A heavily spiced cured sausage takes more flavouring than a mild grilling sausage.
Can liquid smoke replace real smoking?
Flavour-wise you get very close, but the flavouring has no preserving effect. Salting, curing and heat treatment must be done as usual, the liquid smoke only takes care of the taste.
How much liquid smoke goes into a marinade or brine?
Count on 25 ml per litre of marinade or brine. In soups and sauces, 15-25 ml per litre is enough, depending on how pronounced you want the smoky note.
