Usage Instructions
- Salt the ingredient normally using dry salting or brine. Rinse off the salt and let the product dry completely.
- Place the ingredient on a tray and spray the edges first, then spray a thin layer on top.
- Spray until the surfaces are wet, but avoid spraying so much that the liquid begins to drip.
- Refrigerate the product to allow the oil to dry. If you are vacuum packing the food, it should sit for extra time to equalize the flavor before freezing.
- When used for a smoke bath: Mix 2 to 2.5 tablespoons of smoke oil per liter of water. Place the product in the brine and leave it overnight. Do not wipe the food after the bath, but keep it cold until the surface dries on its own.
