This blend contains GDL (Glucono-delta-lactone/E575). For home sausage makers, this provides great peace of mind. GDL acts as an acidity regulator that lowers the pH value of the meat in a controlled way. This "tricks" the meat into thinking it has matured longer than it has, provides a firmer texture faster, and contributes to a safer curing process.
