Information

Cone cheesecloth 45 cm: the shape does the work for you

A cheesecloth has to do two things at once, let the whey out and let the cheese go when it is done. This cone shaped cloth does both. The conical shape gathers the curd towards the bottom so it drains evenly without constant tightening and adjusting, and the holes in the cloth are conical too, which stops it sticking to the surface when you lift the cheese out.

The material is polyethylene, an elastic and hard wearing plastic that does not soak up moisture the way cotton does. It takes a 60 to 70 degree wash and can be used again and again. Wash it before first use, and right after each batch, so the milk proteins do not set into the weave.

Pro tip!
Hang the cloth and curd over a bowl in the fridge rather than on the worktop when you strain fresh cheese or yoghurt cheese. Draining takes longer, but you avoid the surface souring while the mass sits lukewarm, and the flavour stays cleaner.

FAQ Frequently asked questions

How many times can the cloth be used?

Many. Polyethylene takes a 60 to 70 degree wash, and as long as you wash it right after use before the milk residue dries in, it lasts a long time. Replace it when the weave starts stretching unevenly.

Can I use it for yoghurt and fresh cheese?

Yes. It works just as well for straining yoghurt into labneh or draining fresh cheese as for pressing hard cheese. The cone shape gathers the mass by itself.

How does it differ from a cotton cloth?

Cotton soaks up moisture and clings to the curd more easily. Polyethylene releases the cheese, dries faster and takes a hotter wash, while cotton filters slightly finer on very loose curd.

Does it need washing before first use?

Yes. Wash it at 60 to 70 degrees before the first use, as the manufacturer recommends.
