The rubber protectors at top and bottom keep the grinder steady while you work and spare the counter top. Grind the meat just before use and hold the salt until the burgers are shaped. Salt the mixture too early and the proteins start binding, making the burger dense and chewy instead of loose and juicy. Freshly ground meat, salt at the end and a good sprinkle of coarse pepper, that is all it takes.

How to use

The number indicates the standard size of the grinder head. No. 8 is the compact everyday size at 2.4 kg, perfect for dinner portions and smaller batches. No. 22 is the big workhorse for game, sausage making and large quantities. Accessories such as hole plates and sausage funnels follow the same size system.
What is the advantage of all-stainless over tinned cast iron?
Stainless steel is practically maintenance free: it does not rust, needs no oiling after washing and dries quickly. Tinned cast iron is heavier and traditional, but requires the parts to be dried and oiled after every wash. Both grind equally well, the difference lies in the care.
Can I make sausages with this grinder?
Yes, with a size 8 sausage funnel you can stuff smaller batches of sausage straight from the grinder. If you make sausages in large quantities, a bigger grinder or a dedicated sausage stuffer is more efficient, but for everyday use no. 8 works very well.
